Jasmine was featured on Sister Circle Live on January 31, 2018! During the show, she shared with Quad how to make her Cilantro Lime Marinated Beef and Corn Salsa Lettuce Wraps, which were amazing. If you want to test your skills in the kitchen, try out the recipe on your own by following these instructions:
Cilantro Lime Marinated Beef and Corn Salsa Lettuce Wraps
3 ribeye steaks, cut into strips (1/2 to 1/4-inch-thick strips)
3 stalks of fresh corn (corn cut off the stalks)
1 head of Bibb or romaine lettuce – washed and separated into 10 leaves
4 gloves of garlic, minced
1/2 cup of fresh cilantro leaves, chopped (put aside 1 tablespoon for garnish)
1/3 cup of fresh parsley, chopped
3 tbsps. soy sauce
1/2 tsps. Worcestershire sauce
1 jalapeño pepper, chopped and mostly seeded (want just a little heat)
1 small red onion, chopped
3 tsps. sea salt
1 tsp fresh ground pepper
2 lemons
4 limes
1 cup of extra virgin olive oil
Marinate the beef in 4 tbsp of extra virgin olive oil, soy sauce, Worcestershire sauce, juice from two limes, one tablespoon of the red onion, 1 tablespoon of the cilantro, 2 cloves of the garlic, 1 teaspoon of salt, ½ tsp of the pepper. Set aside and let marinate for at least an hour in the refrigerator.
Sauté corn with ½ cup onion, 1 clove of garlic, juice of two limes, ½ jalapeño pepper, remaining cilantro not set aside for garnish) in 1 tablespoon of extra virgin olive oil. Salt and pepper to taste. sauté until onions begin to sweat and remove from heat. Goal is to toast corn but allow it to remain a crisp/crunchy texture.
While corn is being cooked, start cooking the beef in a separate pan. Sauté until meat is just lightly pink on the inside. Add ½ tsps. salt and pepper.
Make vinaigrette with ½ cup olive oil, salt, pepper, juice from 1 lemon, 1 lime, 1 glove minced garlic, chopped parsley, and whisk together.
Lay out lettuce leaves. Fill first with 1 – 2 tablespoons of the corn and then top with the beef (about 4 slices). Drizzle with vinaigrette and garnish with remaining cilantro.
Serve immediately.
